Enjoy this quick and easy Gluten Free Beef Stroganoff as a family favorite weeknight meal. There's nothing like good old comfort food!

Ingredients
  • 2 lbs. ribeyes or flank steak, about 1" thick
  • 2 tablespoons olive oil
  • 4 tablespoons butter, separated
  • 10 oz. sliced cremini mushrooms
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 2 cups beef stock
  • 3 tablespoons cornstarch
  • 1 teaspoon prepared horseradish (optional but recommended)
  • 1 tablespoon Worcestershire sauce
  • ⅔ cup full fat sour cream
  • ¼ cup fresh chopped parsley
  • 12 oz. gluten free fettuccine, bow-tie, or egg style noodles
Directions
  1. Season ribeye steaks or flank steak generously with about 1 teaspoon salt and ½ teaspoon pepper. Set aside.
  2. Begin boiling a pot of salted water.
  3. Heat a large cast iron skillet to medium high. Add oil and heat until drop of water sizzles. Swirl around to coat pan. Add ribeye steaks or flank steak and cook for 3 to 4 minutes per side, adding 2 tablespoons of butter right before flipping. Cook to medium (redish pink in center). Remove from pan and set aside to rest.
  4. While steak is cooking, cut up onion and mushrooms. Once you remove steak, reduce heat to medium and add remaining 2 tablespoons butter. Once melted, add onions and mushrooms. Season generously with salt and pepper.
  5. At this point, begin cooking your noodles.
  6. Cook onion and mushrooms over medium heat for 5-6 minutes, stirring occasionally to avoid burning.
  7. In a small mixing bowl, whisk together beef stock, cornstarch, horseradish, and Worcestershire sauce. Pour into skillet and stir. Bring to a simmer and stir for 2-3 minutes until slightly thickened. Reduce heat to low and stir in sour cream.
  8. After steak has rested, slice into thin strips against the grain. Add strips into sauce and stir to coat.
  9. Once noodles have finished cooking, drain and add to sauce mixture. Stir to coat. Season sauce to taste with additional salt and pepper. If sauce is took thick, add a splash of milk, beef stock, or pasta water and stir. If sauce is too thin, add a little extra sour cream. Top with fresh parsley and serve immediately.
