Serves: 6-8 servings
Ingredients
  • ½ cup mayo*
  • juice of 1 lime (about 1 tablespoon)*
  • 2 teaspoons honey
  • 1 teaspoon freshly grated ginger
  • ¼ teaspoon chili powder
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ head of cabbage (green, purple, or mixture), cored and chopped into thin slices (about 4 cups)
  • ⅔ cup shredded carrots
  • ⅓ cup roughly chopped cilantro leaves
  • ½ cup diced mango
  • 1 small jalapeno, seeded and minced
  • ¼ cup crumbled feta (optional)
Directions
  1. In a small bowl, combine mayo, lime juice, honey, grated ginger, chili powder, onion powder, garlic powder, salt, and pepper. Whisk until smooth. Set aside.
  2. In a larger mixing bowl, combine chopped cabbage, shredded carrots, cilantro leaves, diced mango, and minced jalapeno. Toss to mix veggies evenly.
  3. Pour sauce over veggie mixture and stir to coat. Season to taste with additional salt and pepper if needed. Cover and chill for 2-3 hours. Stir again before serving. Sprinkle top with crumbled feta.*
Notes
*Coleslaw mixture will become more saucy as it sits in the fridge. If you want a creamier coleslaw, add a little more mayo and lime juice.
