You'll be swatting all hands away from these Gluten Free Peanut Butter Chocolate Chip Cookies. Think of a chewy chocolate chip cookie with a hint of peanut butter, bursting with three different types of chocolate chips. Are you sold yet?!

Ingredients
  • 1½ sticks butter, room temperature (12 tablespoons or ¾ cup)
  • 1 cup granulated sugar
  • ½ cup packed dark brown sugar
  • 2 large eggs
  • ½ cup creamy peanut butter (I used the natural, unsweetened kind that you stir)
  • 1½ teaspoons vanilla extract
  • ¼ teaspoon cinnamon
  • 1 teaspoon salt
  • 1¼ teaspoon baking soda
  • 2¼ cups high quality gluten free all-purpose flour (I used Bob's Red Mill 1 to 1 flour)*
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips
Directions
  1. Preheat oven to 375 degrees. Line cookie sheets with parchment paper. Set aside.
  2. In a large mixing bowl, cream together butter, granulated sugar, brown sugar, eggs, peanut butter, and vanilla. Mix until incorporated, scraping down sides as needed.
  3. In a smaller mixing bowl, sift together cinnamon, salt, baking soda, and gluten free flour.* Add to wet mixture and mix until well incorporated, scraping down sides as needed. Add chocolate chips and mix until evenly distributed.
  4. Scoop heaping tablespoons of cookie dough onto parchment paper lined baking sheets, about 2" apart. Gently press extra chocolate chips into tops of cookies, making sure to not flatten cookies.
  5. Bake for 9-11 minutes at 375 until edges are golden brown, cookies are cracking, and no longer look wet.
  6. Remove cookies from oven and carefully slide cookies with parchment paper onto a cooling rack. Allow to completely cool and set before serving. Repeat with remaining cookie dough.
  7. Store extra cookies in an airtight container at room temperature for up to 3 days, in fridge for up to 1 week, or in freezer for up to 3 months.
Notes
*If your flour mix does not contain xanthan gum, add 1¼ teaspoons to the flour mix.
