There is nothing like the addition of freshly Roasted Beets to any of your meals. It's almost like candy for dinner!

Serves: 4-6 servings
Ingredients
  • 2 large beets (3 medium or 4-5 small), peeled and chopped into ¼" cubes (about 3 cups)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Directions
  1. Preheat oven to 400 degrees and line a baking sheet with aluminum foil. Spray with cooking spray.
  2. Peel beets and chop into ¼" cubes. Spread onto aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper. Toss to evenly coat.
  3. Bake beets at 400 degrees for 30-35 minutes or until tender. Remove from oven and eat warm or chill in fridge for 3-4 hours before topping on salad.
  4. Store leftover beets in airtight container in fridge for up to 5 days.
