Roasted California baby gold potatoes drizzled with avocado oil and seasoned with salt, pepper, and a variety of spices. Soft on the inside with a slightly crisp skin.

Ingredients
  • 2 lb. California baby gold potatoes
  • 2 tablespoons avocado oil
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ teaspoon dried oregano
  • ⅛ teaspoon ground mustard
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder
Directions
  1. Preheat oven to 375 degrees. Line a baking sheet with aluminum foil and spray with non stick cooking spray.
  2. Rinse and dry potatoes and place in a single layer in baking sheet. Drizzle 2 tablespoons of avocado oil over potatoes. Toss with hands to evenly coat all potatoes.
  3. In a small bowl mix together salt, pepper, oregano, ground mustard, garlic powder, and onion powder. Sprinkle mixture evenly over potatoes. Toss with hands again to evenly coat potatoes with seasonings.
  4. Bake at 375 degrees for 35-40 minutes, stirring after 25 minutes, until potatoes are tender when pierced with a fork. Remove from oven and allow to cool for 5 minutes before serving.
  5. Add additional salt and pepper to taste.
