Slow Cooker Tomato and Artichoke Heart Braised Pork Chops

A deliciously easy and low prep crockpot meal that will leave your guests thinking you slaved away. Tangy bold flavors surrounding every bite of tender meat.

Ingredients
  • 6 boneless pork chops, fat trimmed (4 oz. each)
  • 1 can tomato sauce (15 oz.)
  • 2 tablespoons balsamic vinegar
  • ¼ cup white cooking wine (I used an American Sauvignon Blanc)
  • 3 garlic cloves, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons freshly chopped oregano
  • 1 teaspoon dried basil
  • 1 cup diced tomatoes
  • 1 can artichoke hearts, drained and quartered (15 oz.)
  • 1 cup shredded asiago cheese
  • 4 cups cooked brown rice
Directions
  1. Trim fat from pork chops and place in bottom of crockpot.
  2. In a separate medium sized mixing bowl combine tomato sauce, balsamic vinegar, white wine, minced garlic, salt, pepper, oregano and basil. Mix until ingredients are evenly dispersed. Add diced tomatoes and drained artichoke quarters. Pour mixture over top of pork chops.
  3. Cover crockpot with lid and cook on low for 7 hours.
  4. Serve over brown rice and garnish with shredded asiago cheese.
