Ingredients
  • ½ cup melted coconut oil, cooled to touch
  • ¾ cup granulated sugar
  • ⅓ cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • zest from 1 orange (about 2 teaspoons)
  • ½ teaspoon grated ginger
  • ½ cup superfine white rice flour, plus more for coating pans
  • ½ cup millet flour
  • ½ cup potato starch
  • ¼ cup coconut flour
  • ¼ cup tapioca starch
  • 1½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon xanthan gum
  • ¼ teaspoon baking powder
  • ¼ cup sour cream or buttermilk
  • ¼ cup fresh squeezed orange juice
  • 1½ cups mashed bananas (about 3 medium)
  • 1 cup semi-sweet chocolate chips, divided
  • ⅓ cup chopped macadamia nuts
Directions
  1. Preheat oven to 350 degrees. Grease and lightly flour (with white rice flour) 4 mini loaf pans. Set aside.
  2. In a small bowl, mash bananas until soupy. Set aside.
  3. In a larger mixing bowl or stand mixer, whisk together coconut oil, sugar, honey, eggs, and vanilla until smooth. Add in orange zest and grated ginger and stir.
  4. In a smaller mixing bowl, sift together white rice flour. millet flour, potato starch, coconut flour, tapioca starch, baking powder, salt, cinnamon, xanthan gum, and baking powder.
  5. Add half of dry ingredients to wet and stir until incorporated. Pour in buttermilk and orange juice and stir until evenly mixed. Add remaining dry ingredients and stir until smooth. Add in mashed bananas and stir until well incorporated, scraping down sides as needed.
  6. Fold in ⅔ cup chocolate chips. Divide batter evenly between 4 mini loaf pans. Top with remaining chocolate chips and chopped macadamia nuts. Gently press down so toppings stick to the batter.
  7. Bake loaves at 350 degrees for 35-40 minutes or until top springs back at touch of a finger and toothpick inserted into center comes out clean. My loaves take closer to 40 minutes.
