Make a refreshing batch of this rich and chocolaty Gluten Free Basic Chocolate Ice Cream. Dress it up with your favorite toppings and mix-ins.

Serves: 1 quart
Ingredients
  • 1 can evaporated milk (or 1½ cups whole milk)
  • 1 cup semi-sweet chocolate chips
  • ½ cup sugar
  • ¼ cup dutch processed cocoa powder
  • ½ teaspoon vanilla
  • dash of salt
  • 2 cups heavy whipping cream
  • 1 cup desired mix-ins, plus more for toppings
Directions
  1. In a microwave safe bowl or on the stove top, heat evaporated milk to boiling (2 mins in microwave). Remove from heat and whisk in sugar, cocoa powder, vanilla, and dash of salt until dissolved. Pour in chocolate chips and stir until smooth. Cover and chill in fridge for 30 minutes.
  2. Remove chocolate mixture from fridge and pour into a large mixing bowl. Add 2 cups heavy cream and whisk until combined. Cover and chill an additional 1-2 hours or until cold.*
  3. Pour mixture into quart sized ice cream maker and church according to pack age directions. Add desired mix-ins 3 minutes before it's done churning.
  4. Serve soft immediately or scoop ice cream into plastic container and chill for 4-6 hours in the freezer or until firm (I prefer this method for harder ice cream). Top with additional mix-ins.
  5. Store leftover ice cream in airtight container for up to 1 month in freezer.
Notes
*It is very important that you let it completely chill or the ice cream will not get hard enough in the ice cream maker.
