Serves: 4-6 servings
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • salt and pepper to season
  • 2 cloves garlic, minced
  • 2 cans diced tomatoes (15 oz. each)
  • 1 small can tomato paste
  • 1 tablespoon balsamic vinegar
  • ⅓ cup coconut sugar
  • ½ teaspoon ground mustard
  • 2 teaspoons Italian seasoning
  • ½ teaspoon dried basil
  • ¼-1/2 teaspoon pepper
  • ¾-1 teaspoon sea salt
Directions
  1. In a large skillet, heat oil over medium heat until pan is hot enough that a drop of water sizzles. Add onion and carrots and stir until coated. Reduce heat to just below medium. Season with a few shakes of salt and pepper. Cook until veggies are tender, about 6-8 minutes, stirring occasionally to avoid burning. Add garlic and cook 1 minute more.
  2. Add remaining ingredients to saucepan* and stir to combine. Bring sauce to a low boil. Reduce heat to low and simmer for 5-10 minutes until desired thickness is reached.
  3. If you want your sauce smooth, transfer to a blender and blend until desired consistency is reached.
Notes
*Only add ¼ teaspoon of pepper and ¾ teaspoon salt to begin with. Add more to taste.
