Gluten Free French Roast Chocolate Toffee Cookies

Soft and chewy chocolate cookies flavored with French roast ground coffee and filled with bits of toffee and dark chocolate pieces.

Ingredients
  • 1 stick butter (1/4 cup), room temperature
  • 1 egg
  • ½ cup granulated sugar
  • ½ cup dark brown sugar
  • 1 teaspoon vanilla extract
  • ⅓ cup coconut flour
  • ¼ cup brown rice flour
  • ¼ cup potato starch
  • ¼ cup tapioca starch
  • ½ cup gluten free oat flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon xanthan gum
  • ½ to 1 tablespoon French roast ground coffee*
  • ¼ cup toffee pieces (I like the Heath toffee bits)
  • ¼ cup Nestle dark chocolate chips
  • Slice almonds (optional)
Directions
  1. Preheat oven to 350 degrees and line baking sheets with parchment paper. Set aside.
  2. Begin making cookie dough in a large bowl or stand mixer by beating butter, egg, granulated sugar, and dark brown sugar together until smooth. Add vanilla and mix on low until incorporated.
  3. In a smaller mixing bowl sift together coconut flour, brown rice flour, potato starch, tapioca starch, oat flour, baking soda, salt, xanthan gum, and coffee granules.
  4. Add dry sifted ingredients to egg mixture and mix on low until combined, scraping down the sides of the bowl. Beat on medium speed for 2 minutes. Mix in toffee bits and dark chocolate chips. Allow mixture to sit for 5 minutes to absorb moisture. Stir with a wooden spoon.
  5. Scoop walnut sized balls of dough onto cookie sheets 2" apart. Top with sliced almonds and additional chocolate chips if desired. Bake at 350 degrees, 1 pan at a time, for 8-10 minutes until cookies look like they are set on the edges and setting in the middle.**
  6. Allow cookies to cool on cookies sheets for 5 minutes before removing to continue cooling on cooling racks.
Notes
*Depending on your preference for coffee flavor, use ½ to 1 tablespoon of coffee granules. 1 tablespoon gives a distinct, yet not overwhelming, coffee flavor and ½ tablespoon will give you just a hint of flavoring.
**Because these cookies are dark brown it is difficult to tell when they are browning. It took my cookies almost 10 minutes to cook to my desired texture which is crisp on the edges and slightly soft in the middles.
